Reporting to the Club Owner / General Manager, the job holder will be responsible for managing all of the day-to-day operations of the kitchen venue.
Responsibilities:
- Maintain the Kitchen equipment, infrastructure, tools, and premises in good repair and working condition
- Control Profit & Loss by following menu control procedures, maintaining inventory, managing labor, reviewing financial reports, and taking appropriate actions
- Work with the owner/GM to suggest and plan for events and any special functions
- Pre-event and on-site communication with the event planners
- Work closely with internal event planners and clients to understand event goals, objectives and specific menu plans that promote the restaurant brand
- Supervise the operation of the kitchen to maximize profitability, minimize wastage/spoilage, and conform to operational HACCP regulations.
- Troubleshoot and smooth issues relating to the successful catering of events
- Maintain all PIC specific licenses and documentation for presentation to inspectors and local authorities.
- Recruit, interview, and hire employees; supervise, take disciplinary actions, motivate and train
- Conduct orientation and oversee the training of new employees; develop employees by providing ongoing feedback, establishing performance expectations and by conducting performance reviews
- Manage shifts which include: daily decision making, scheduling, planning while upholding standards, product quality and cleanliness
- Control day-to-day operations by scheduling labor, ordering supplies, following up regularly and developing the venue team
- Ensure compliance of Occupational Safety and Health Act, local health and safety codes, and company safety and security policy with regards to DTCM and CID.
WORKING CONDITIONS
- Position requires prolonged standing and navigating the kitchen, managing staff and monitoring/maintaining the best atmosphere.
- Hours may vary if operator must fill in for his/her employees or if emergencies arise
- Ability to perform all kitchen functions, if required.
